SOUS Chef

Fourth and Church is a restaurant in Hove specialising in innovative cooking alongside wines from small producers. We have been placed in Brighton's top 20 best restaurants for the last 3 years, have been reviewed in national newspapers and look forward to gaining more accolades soon. We have an ever expanding programme of curing, pickling and preserving meats, fish and vegetables as well as sourcing goods from artisan producers. We use modern and traditional techniques to highlight quality ingredients in our dishes.

We are looking for a Sous Chef with attention to detail and a passion for great produce. The right person will want to take the opportunity to develop their career in a growing business. We are looking for someone with experience in a busy kitchen producing high quality food. A responsible, dedicated team player, conscientious and meticulous. A good attitude and work ethic are essential. We want someone who loves what they do and wants to get as much out of the job as they put in.

Daily activities

  • Cooking and preparing consistent high quality food on a daily basis as directed by the Head Chef

  • Ensuring the kitchen is managed to the highest operational and food hygiene standards

  • Ordering and maintaining control over costs with the Head Chef

  • Effectively managing the kitchen with the Head Chef, ensuring all sections are producing food to the quality standards expected

  • Ensuring a thorough set up and close down of the kitchen is adhered to

  • Minimising wastage

  • Building a good knowledge of all our produce and dishes in terms of provenance, ethics and seasonality

  • Input on the menu and creativity will be actively encouraged

  • Mentoring junior staff to ensure all the above goals are acheieved and a happy, professional and effecient work culture is promoted
