A three-course menu plus three matching wines:

Confit cod, pickled salsify, wild mushrooms, celeriac

Jerusalem artichoke custard, Koji pickled mouli, radicchio, caramelised pecans

Served with a glass of Casal Sta. Maria Arinto (Portugal) 

Red wine-braised ox cheek, smoked parsnip, cultured leeks
OR
Roasted chestnuts, ricotta dumplings, braised chard, black garlic emulsion
both served with Crispy potatoes and roast pumpkin, rosemary and caper salsa

Served with a glass of Vinteloper Touriga Nacional (Australia) 

Spiced poached pear, iced pistachio, yogurt parfait
Pain d’epices

Served with a glass of Ch Lapuyade Jurancon Petit Manseng (France)
